Meatless Monday's

Let's all pledge to eat less meat, even if it is just for one day. Sign up to take part in Meatless Monday's, a national movement aimed at doing good for yourself and the environment. Every Monday you can join thousands of other people who choose to take meat out of their food equation for the day. Sign up at TakePart.Com and take the first step towards a better, healthier you.

Click here to take the pledge: "When you pledge to eat less meat, you’re doing something good for yourself and the environment. Eating less meat lowers your risk of heart disease, diabetes and some cancers. It also lowers your carbon footprint and reduces water usage. An estimated 1,800 to 2,500 gallons of water go into one single pound of beef!"

If you aren't sure where to start, I have an array of dishes perfect for MM. There are hundreds of resources right at your fingertips for creative ways to incorporate vegetables into your diet as the main dish, not just the side dish. Check out this site, dedicated solely to Meatless Monday's. If you aren't sure where to begin, drop me an email at simplefoodhealthylife (at) gmail (dot) come and we can work on a menu that is perfect for you and your family. Check in tomorrow for what I am eating on Meatless Monday and follow along on facebook or twitter, using the hashtag #meatlessmonday.

Here are just a few of my favorite Meatless Monday meals:
